Red curry comes with onion and garlic unless you stop it. Most noodle and rice plates can be made without.
Sugar Land. The default red curry is not safe. The note is that most noodle and rice dishes can be cooked without onion and garlic if you say so, clearly, including the curry pastes they would normally start with.
Fish sauce and shrimp paste are a separate problem from onion and garlic. If the plate also has to skip those, say that too. Egg noodles and fried egg are easy to miss on a Thai menu.
How to order
- Point at the noodle or rice dish and say no egg, no onion, no garlic, including the curry paste.
- Do not order the red curry as written and then try to pick around it.
No egg, no onion, and no garlic. That includes the sauce, the tadka, the dough, the oil, and the powder.
